The Ethicurean’s sustainable food pioneers launch Sæson

A year after the closing of the Michelin-starred, The Ethicurean restaurant, Matthew Pennington launches ‘Sæson’, an online recipe platform

Founded by co-owners of Ethicurean Life, Matthew Pennington and Julia Cradock, Sæson, is a new online recipe club & community platform which aims to build healthy engagement with food and well-being, reflecting their passion for seasonal cooking, foraging, sourcing food, and well-being.

According to Matthew Pennington, who co-owned the Ethicurean restaurant, the new platform will provide monthly recipes, foraging tips, and grow a community of like-minded people. Subscribers can expect monthly recipes, tips on foraging, plant identification, how to use garden gluts and food fermentation ideas. Community forums will allow readers to engage with like-minded individuals, share experience and learn from others.

“We’re hoping to build a vibrant community of people who love good food and the environment as much as we do”, said Pennington.

Closed since October 2023, the Green Michelin-star awarded, Ethicurean restaurant at Barley Wood Garden was run by Pennington and chef Mark McCabe. The restaurant won numerous industry awards and was known for working closely with growers, makers and suppliers who shared their vision for a gentle footprint on the planet and responsible practices.
